It's 'Chili' In Hawaii!
Hi Everyone! I'm dropping by real quick to respond to a request for a chili recipe. A nice gentlman e-mailed us and asked for a recipe because he has a chili contest with his friends coming up! I hope this post comes in time for the contest as I have been on the road over the last week.
This is a basic recipe that can be tweaked with ingredients that you and your friends enjoy. I have a FANTASTIC chili recipe included in my new cookbook, but I can't post that here until it's officially published.
The secret to this basic recipe is to use the best ingredients you can find.
Chili Recipe
Serve with grated cheese, sour cream, slices of fresh avocado and tortilla chips for dipping.
Ingredients
• 3 Tablespoons olive oil
• 1 1/2 cups chopped onion
• 8 large garlic cloves, chopped
• 2 pounds ground chuck
• 2 teaspoon dried cumin
• 1 teaspoon dried oregano
• 1 15oz can tomato sauce
• 1 6oz can tomato paste
• 3 cups diced tomatoes in juice
Directions
Heat oil in heavy saucepan over medium-high heat. Add onions and garlic. Saute about 8 minutes or until onions are translucent. Add chuck and cook until brown, breaking up meat with a spatula as it cooks. Add cumin & oregano. Stir 2 minutes. Mix in tomato sauce, diced tomatoes with juice and tomato paste. Simmer until thickened to desired consistency, stirring occasionally to prevent sticking, about 1 and a half hours. Season to taste with salt and pepper. Refrigerate until cold then reheat over low when ready to serve.
REMEMBER: Great chili has NO beans!
